Spicy Chickpea Bowl

Recipe:

Prep time: 3 min
Cook Time: 5 min
Serves: 4

Ingredients:
1 tsp Coconut oil
½ tsp Mustard seeds
1 Dried red chili (broken into few pieces)
A pinch Asafetida (optional)
¼ tsp Sea salt
2 tbsp Fresh squeezed lemon juice
1 tbsp Fresh cilantro chopped
1 tbsp Grated unsweetened coconut

Directions

  1. In a frying pan heat the oil on medium heat, add the mustard seeds and sauté 30 seconds

  2. Add the red chili and asafetida and sauté for 30 seconds

  3. Add the chickpea to the pan, add the salt and lemon juice and mix well until all the ingredients are combined

  4. Add fresh cilantro and toss well.  Serve cold or warm.
